Tiramisu Recipe
Serves: 4-6ppl

- 35% Cream – 2 cups
- Sugar – 1 cup
- 12 Egg Yolk
- Vanilla – 1 tbsp
- Savoiardi Cookies – 1 package
- Brewed Espresso – 4 cups
- Amaretto – ½ cup
Method
- Add ½ cup Amaretto to the brewed espresso and set aside in the fridge to cool.
- Pull Mascarpone cheese from the fridge and let it come slightly to room temperature.
- Add the 35% cream to a stand mixer and whip on medium speed until it is slightly thickened.
- Add ½ cup of sugar to the cream and whip for another minute.
- Mix in the mascarpone to the cream and whip just until the mascarpone is incorporated. Store the mixture in a bowl and place in the fridge.
- Clean the bowl of the stand mixer.
- Add the egg yolk, the remaining sugar and vanilla to the stand mixer and whip until the mixture is thick, almost doubled in size and can hold a figure 8.
- Gently fold the cream/mascarpone mixture into the egg mixture and set aside.
- Get you pan, tiramisu cream, savoiardi cookies and espresso soak.
- Dunk the savoiardi cookies in the espresso soak and lay them in the pan, side by side. Continue to do this until the bottom layer is full of the soaked Savoriardi cookies.
- Spread 4 cups of the tiramisu cream on top of the cookies and spread evenly until cookies are all covered.
- Do another layer of the soaked cookies on top of the cream.
- Add another 4 cups of the tiramisu cream and spread evenly until cookies are all covered.
- Dust the top layer with cocoa.
- Enjoy.
