Dempster’s Signature Gold Burger and Gold Sausage Buns Recipe Ideas

That’s why famous Toronto foodie Jacky Kwok (@kwokspots) and Quebec’s Les chefs! cooking competition show finalist, Amine Laabi (@just.another.c00k), have paired up with Dempster’s® Signature to craft four unexpected, yet approachable, restaurant-worthy recipes your guests will be raving about all summer long:

Jacky Kwok’s Lobster Rolls @kwokspots

    • 4 servings
    • Ingredients:
      • 4 Dempster’s® Signature Gold Sausage Buns
      • 2 cups lobster meat (1 small lobster tail per sandwich)
      • 1⁄4 cup mayonnaise
      • 1 bunch chives
      • 1 lemon
      • 3 tbsp butter
    • Directions:
  1. Split lobster tails in half lengthwise, using scissors to cut from top to bottom. Place
    lobster onto a high heat grill, meat side down.
  2. After 3 minutes, flip and baste with melted butter and cook for 1 minute. Flip lobster tails
    meat side down for another 2 minutes.
  3. Extract lobster meat and cut into 1⁄2 inch pieces. Mix with remaining ingredients and
    assemble in Dempster’s® Signature Gold Sausage Buns.
  4. Top with extra chives and lemon wedge.

Jacky Kwok’s Soy-Glazed Ribwich @kwokspots

    • Ingredients:
      • 4 Dempster’s® Signature Gold Burger Buns
      • Rack of ribs
      • 6-10 cloves of garlic
      • Sesame seeds
      • Olive oil
    • Dry rub (equal parts):
      • 1 tsp salt
      • 1 tbsp garlic powder
      • 1 tsp black pepper
      • 1 tbsp brown sugar
    • Glaze:
      • 3 cloves garlic
      • 1⁄4 cup soy sauce
      • 1⁄4 cup brown sugar
      • 1⁄4 cup honey
      • 1 tbsp rice wine vinegar
      • 2 tbsp hoisin sauce
    • Coleslaw:
      • 1⁄4 small regular cabbage
      • 1⁄4 small purple cabbage
      • 2 tbsp apple cider vinegar
      • 1⁄4 cup mayonnaise
      • 2 tbsp honey
      • Salt, to taste
    • Directions:
  1. Preheat oven to 300°F. Remove membrane from ribs (optional), season in dry rub, and
    add 1⁄4 cup water. Wrap tightly in tin foil bone side up and bake for 2.5 hours.
  2. Cut and thinly slice cabbage. Mix cabbage with remaining coleslaw ingredients and add
    salt, to taste.
  3. Thinly slice 6-10 cloves of garlic. Add to a pan and cover with 1⁄2 cup cold olive oil. Bring
    to medium heat and stir until golden brown to create crispy garlic chip topping.
  4. In a saucepan, add glaze ingredients. Simmer over medium heat for 5-10 mins to
    thicken, then take off to cool.
  5. Remove bones from ribs and brush on a generous layer of glaze. Finish cooking over
    the grill or in a broiler for an additional 5 mins, until caramelized.
  6. On Dempster’s® Signature Gold Burger Bun, add coleslaw and meat. Top with sesame
    seeds, crispy garlic chips, and green onions.

Amine Laabi’s Piri Piri Grilled Chicken Breast @justanotherc00k

    • Ingredients:
      • 4 Dempster’s® Signature Gold Burger Bun
      • Piri Piri:
      • 15 Fresno peppers, washed and cut (remove seeds, if desired, to cut spice)
      • 2 small cloves of garlic
      • 1 tsp paprika
      • 25 mL white wine
      • 20 mL maple syrup
      • 1 lemon, juiced
      • Salt, to taste
    • Coleslaw:
      • 10 Brussels sprouts, thinly sliced
      • 1 green apple, julienne cut
      • 2 sprigs of coriander, with leaves
      • 1 tbsp cider vinegar
      • 1 tbsp maple syrup
      • Salt and pepper, to taste
    • Chicken:
      • 8 boneless chicken thighs
      • 2 tbsp Piri Piri
      • 1 tbsp olive oil
      • Salt, to taste
      • Spicy Mayo:
      • 1⁄2 cup mayo
      • 1 tbsp Piri Piri
    • Directions:
  1. Preheat BBQ to 375°F. Finely chop Piri Piri ingredients using a food processor to create
    a smooth purée. Keep up to 1 week in the fridge.
  2. Mix cold coleslaw ingredients in a bowl and macerate for 15 mins.
  3. In a separate bowl, mix chicken, Piri Piri, oil and salt. Let rest for 10 mins.
  4. Grill chicken thighs for 6-7 mins on each side while brushing with Piri Piri, ensuring
    internal temperature reaches 74 degrees.
  5. Toast Dempster’s® Signature Gold Burger Buns lightly on the BBQ. Add a spoonful of
    spicy mayonnaise, coleslaw, and grilled chicken.

    • Ingredients:
      • 6 Dempster’s® Signature Gold Sausage Buns
      • 100g Greek feta cheese
      • 50 Kalamata olive slices
      • 10 mint leaves, chopped
      • 1 French shallot, minced
    • Kefta:
      • 300g minced lamb meat
      • 300g minced veal
      • 1 tsp ground cumin
      • 1 tsp sumac
      • 1 tsp salt
      • 1 tbsp chopped mint
    • Tzatziki:
      • 3/4 cup plain Greek yogurt
      • 1 Lebanese cucumber (squeeze out water and grate)
      • 1 clove garlic, finely chopped
      • 1⁄2 lemon, zested and juiced
      • Salt, to taste
    • Directions:
      • Preheat the oven to 400°F. Mix kefta ingredients in a bowl and add to skewers.
      • Mix tzatziki ingredients in a separate bowl.
      • On Dempster’s® Signature Gold Sausage Bun, add tzatziki, a kefta skewer, crumbled
      • feta cheese, Kalamata olives, mint, and the minced shallot. Finish with a drizzle of olive
      • oil.
      • Cook for 4-5 minutes on each side.
